Restaurant Manager

Job Brief:
  • Oversee the day-to-day operations of the restaurant. Review previous days’ sales figures and take proactive initiatives to ensure outlet target is met. Responsible for yearly budget achievement and accountable of all costs involved in promotional and development areas within the outlet.
  • Implement activities as per the outlet plan and carry out cost control measures to achieve set targets vs budgets. Monitor the sales figures against forecasts, maximise sales and profit. Provide feedback to the F&B; manager with recommendations and suggestions pertaining to the promotional activities to attract customers. Drive measurable and cost effective marketing activities.
  • Monitor staff performance with respect to customer service ensuring that all customers are greeted and met courteously, as well as attended to their needs
  • Guide, coach and train his subordinates on customer service & discipline. Ensure product knowledge and market/competition intelligence is given as on going in restaurant training.
  • Resolve customer issues as required. Maintain accurate customer database through collection of business cards. Log any guest comment or complaint in the daily log and to be communicated to the F&B; manager and his/her team.
  • Organise the restaurant layout to create the right ambience Maintain cleanliness / hygiene at all levels of restaurant operations.  
  • Ensure that a total stock count in the end of every month is carried out and monitor compliance with stock transfer procedures, with a view to ensure availability of all stocks work closely with the cost controller to obtain minimal wastage.
  • Ensure optimum staffing levels are maintained through liaison with the Unit HR Manager.
  • Supervise the staff with respect to their personal grooming. Ensure adherence to all company policies and procedures and that all areas of the restaurant are maintained up to the standard of the restaurant
  • Ensure the quality of food and beverage is maintained. Find ways to improve the efficiency of the operations that will benefit both the restaurant and our guests. Find methods of reducing and maintain costs without affecting the quality of the product or range offered to the guests. To be familiar with all outlet menus and beverage lists. Identify and resolve IT system errors as required. To report any challenges occurred in the operations to the F&B; Manager with the correct solution.

Person Specification:
  • Graduate in any discipline with tertiary qualifications in hospitality
  • Excellent communication and interpersonal skills
  • A good command of spoken and written English essential
  • Knowledge of other languages including Arabic and or Italian advantageous
  • Computer literate with knowledge of basic accounting procedures.
  • 5 to 7 years experience in F&B; & hotel industry & management training
  • Ability to take ownership of the business
  • Excellent people management, communication skills with ability to develop people.
  • Natural leader, dynamic
